Mashed Potato Bake


Make your favorite kind of mashed potato and add any flavoring you would like. I tend to like roasted garlic in this one. Mix with one egg and cover with cheese. Bake at 375 until brown.

BBQ Meatballs

 



These were so good.
Buy or make meatballs and then simmer in barbecue sauce for 30 to 40 minute or so. Serve over white rice.

Cheese Souffle

My very first cheese souffle. It tasted even better than I had expected!

Bacon Turkey


1 boneless turkey tenderloin or boneless breast
As much bacon as you need to wrap up your turkey
Cover with foil and bake at 350 until turkey is halfway cooked
Uncover your turkey to let the bacon brown
Cook until done

Pasta Alfredo



Pasta Alfredo
1 pound of pasta
1 tablespoon olive oil
2 gloves garlic-minced
2 tablespoons cornstarch
2 tablespoons Smart Balance
1 cup half and half
As much Parmesan cheese as you would like

Extra options:
Tomatoes
Chicken
Steak
Vegetables

It has been a while

I didn't forget about this blog. It seems like a lot of work for something that nobody knows about. I haven't really made an effort to let people know about it either. In some ways I think I prefer it that way. I still have been cooking and taking pictures of my food. Cooking is still my number one passion, which I continue to do on almost a daily basis. I will try to get some pictures up. Since it has been so long since some of the pictures were taken, I am not sure if I remember the exact recipe. I still do not write things down thinking I will remember, but I usually don't. Well, if you are reading this thank you.

Chicken, onion, and pepper bake

This came out very good and made a wonderful leftover in a gluten free hot dog bun.

1 boneless skinless chicken breast
1 small onion, sliced
half a red pepper, sliced
1 egg
salt and pepper

Preheat your oven to 350
Season and cook you chicken until done then cut into bite size pieces.
Saute and season the onion and pepper until tender.
Combine the chicken, onion, and pepper in dish or what you choose to bake this in and cool slightly. If you do not want to let is cool then just temper the egg so it does not scramble.
Once slightly cooled add the egg and bake about 8 minutes until done.
Serve with a salad, rice, by itself, or on gluten free bread.

Ground Flax Seed Pizza

Since my diet has been even more restricted lately, I cannot have pizza. I have been craving pizza, but needed to come up with a much healthier way to make it. I also had to use dairy free cheese instead of real mozzarella cheese. All and all this came out pretty good. I think it was because of the ham!


4 tablespoons ground flax seed. I grind my own
1/4 cup, maybe more or less, of water
1/2 teaspoon dried garlic
1/2 teaspoon Italian seasoning
1/4 cup sauce
1/2 cup dairy free cheese
Any other toping you may like. I had some left over ham, so I used that.

Preheat the oven to 375 degrees
Mix the flax seed, water, garlic, and Italian seasoning together. The mixture will be a little liquidly, but it should not have the consistency of water. It needs to be thicker, maybe like ketchup. It might be easier to spread the mixture with your hands. I find a spoon or rubber spatula stick a little.
Bake the flax seed for about 5 or 10 minutes until it gets darker in color.
Once browned, take out of oven and add toping. Bake until cheese is melted (dairy free cheese does not really melt, so just pretend).

Veggie Stir Fry

I made this on Friday. I had some vegetables not being used so I figured why not put them all together. This is what it looked like.



Just take what you have for vegetables. I cut the carrots in thin slices so they would cook faster. Just saute everything together in a little olive oil, salt, and pepper. If you have some dry of fresh parsley you could add that too. I added a little dry parsley.

Spaghetti Bundles

I made this wonderful dish today. The lighter one is garlic and Parmesan cheese. The red one is just some tomato sauce I mixed in. This was a very delicious treat. 
  



Half a pound of your favorite gluten free spaghetti
Mini muffin pan
1 tablespoon dried garlic
1/4 cup of Parmesan cheese
1 teaspoon dried parsley
1 teaspoon dries oregano
1/2 cup pasta sauce
Salt and pepper to taste
A little butter or oil to grease the pan

Preheat the oven to 375 degrees
Cook pasta, but not completely. Drain the pasta water completely when done. 
Evenly separate the pasta so you have two separate bowls.
In one bowl of pasta add the garlic, Parmesan cheese, parsley, oregano, salt and pepper. Mix well.
In the other bowl add the tomato sauce and mix well.
Swirl the spaghetti on a fork to make a round ball and evenly distribute in the mini muffin pans.
If you want, top all with some more Parmesan cheese and bake about 15 minutes.

Garlic and Tomato Chicken

I have been on a garlic kick lately, maybe because I have been on a very bland diet and I am craving flavor. This came out wonderful. I used six big cloves of garlic. The garlic did not overpower the chicken at all. 

 2 big boneless and skinless chicken
3 tablespoons olive oil
6 cloves of garlic
4 large tomatoes or 6 medium cut into bite size pieces
1/4 cup white wine
Salt and pepper


Preheat your skillet and then add 1 tablespoon of oil
Brown the chicken on both sides. Do not worry if it is not cooked through. It will finish cooking later.
After the chicken is brown take it out and set aside.
Add the other 2 tablespoons of oil and then add the garlic. Saute for about 1 minute.
Then add the tomatoes and saute for 3 minutes or so. While that is cooking, cut up your chicken into bite size pieces.
Add the wine to deglaze the pan and cook about 30 seconds.
Add the chicken back to the dish and cook for about 5 minutes.
Serve with rice or a side salad.

Bacon, Egg, and Cheese Pasta

This was another idea that came to me when I was bored. I wanted something with bacon and this is what I came up with. Needless to say I should have made double what I did.

1 pound gluten free pasta
1 egg
2 slices of your favorite cheese or 16 ounces. More or less if you like.
4 thick slices of bacon-cooked
1 tablespoon garlic-minced
1/2 cup Parmesan cheese
2 tablespoons Smart Balance butter
salt and pepper to taste

Preheat oven to 375 degrees
Cook pasta, but not completely and drain.
Beat the egg in a separate dish and temper with some of the hot pasta water. Add the egg to the pasta and mix.
Crumble the bacon and add it to the pasta. Then add the garlic and cheese of your choice and mix.
Once everything is mixed add it to a baking dish and dot it with the butter. Then add the Parmesan cheese and bake about 10 minutes until cheese is melted.




Baked Sausage and Rice

This was a new dish that came out wonderful. I am finding the more simple I make a dish the better it is coming out.

1 cup cooked rice
1 tablespoon olive oil
2 sweet Italian sausages. Take the casing off.
1 teaspoon dried onion
1 teaspoon dried garlic
1/4 cup Parmesan cheese
salt and pepper to taste

Preheat oven to 375 degrees
Saute the sausage, onion, garlic, salt and pepper. Do not worry about cooking the sausage completely. This is more of a step to drain some fat. The sausage will continue to cook in the oven.
In a baking dish add a little oil or butter to coat the bottom and sides.
Add the rice.
Once the sausage is cooked add that on top of the rice and then top with Parmesan cheese.
Back at 375 for about 10 to 15 minutes until cheese is melted and sausage is browned.

Beef Fried Rice

I must say this was the best fried rice I made. Everything came out perfect. I usually use chicken because for some reason red meat bothers me, but I had meat that needed to be used. I also always use Jasmine rice when I use rice.

 


2 cups rice-cooked
1 tablespoon oil of your choice
1 pound meat
1 to 2 teaspoons dried onion
1 to 2 teaspoons dried garlic
4 tablespoons teriyaki sauce
2 tablespoons soy sauce or tamari sauce
2 tablespoons Smart Balance butter

Heat your wok or your pan on med high heat and add the oil.
Once wok or pan is heated brown the meat.
Once meat is brown add the onion, garlic, and teriyaki sauce. Cook everything for about 2 minutes and then add the rice.
Saute the rice for about 5 minutes and then add the soy sauce or tamari sauce and butter. Saute for another 5 minutes or so and then you are ready to eat.

If you like your rice crispy, do not all the rice at once. Do this in batches and maybe saute a little longer than 5 minutes.

Garlic wings with steak fries

I must say this is probably my second favorite meal next to pizza. I love this. As for the recipe, I use a family pack of chicken, about 6 cloves of garlic, garlic powder. Mix with the chicken. Place the chicken skin side up and drizzle with olive oil and sprinkle salt on top. Bake at 400 until golden. Add a little parm cheese when they are done if you would like. I am sorry to say this recipe is not mine. It is George Stella's. I just made a couple adjustments.

Chocolate cake whipped cream frosting roll

So I have some chocolate cake mix and was wondering what I could do. This is what I came up. I made the cake according to the directions and put some of the batter on a parchment paper lined cookie sheet. Don't use too much of the cake batter or the cake will be too thick to roll. Once the cake is cool, evenly distribute whipped cream frosting and roll. It might fall apart, mine did but it wasn't too bad.

I had left over cake batter so I made mini cupcake with strawberries inside. The strawberries make the cake a bit watery but it tasted good.

Hands down my favorite food!

How I make my pizza. This is a method I found through trial and error.

1 package of Bob Red Mill pizza mix
1 large egg
1 3/4 cup warm water
1 tablespoon olive oil

Heat water until warm. In the package of flour you are provided yeast. Add yeast to the warm water and let stand about 1 minute.
In a bowl or mixer with a paddle attachment add the flour, egg, and water with the yeast. Mix until combined well. Once mix is combined form into a ball and top with the oil. Let stand 45 to 60 minutes.

Once risen, preheat oven to 425. I say do not preheat your oven until the mix is risen. Spreading out the mix on the aluminum pizza trays is time consuming and once you are done spreading the mix your oven will be preheated.

I use four disposable aluminum pizza trays. Evenly distribute mix onto the trays. I oil a piece of plastic wrap and use that spread the mix. Place the oiled plastic wrap on top of the mix and smooth out. This is a little time consuming, but so much easier and it does not stick to your hands.

Once mix is spread out, bake 5 to 10 minutes. Take out of the oven and top with what every you like. Bake another 10 to 15 minutes until cheese is nice and melted.

Still learning how to do this

So I figured out I can set tabs for different pages. Now the problem is I want to organize my posts into categories but I am not sure how. The only thing I figured out is that I can copy and paste post by post. I know I don't have many posts yet, but this is a bit time consuming. Is there an easier way to do this? Thank you.

Garlic and Tomato Chicken

This idea came from Cabot Tomato and Basil cheese. I figured why not put it in chicken. I love cheese! This came out so good. I made the chicken on a bed of garlic potatoes.

For the potatoes:
I used half a small bag of little potatoes, cut into slices.
1/4 teaspoon Italian seasoning
1/2 teaspoon dried garlic
1/2 teaspoon dried onion
1 tablespoon olive oil
salt and pepper to taste
Mix all of these ingredients together and lay flat on the bottom of a baking dish.

For the chicken:
2 large boneless skinless chicken breast
2 thick slices of tomato basil cheese
1/2 teaspoon Italian seasoning
1/2 tespoon garlic
1/2 teaspoon oregano
1 can diced tomatoes
salt and pepper to taste

Butterfly chicken, make sure not to cut all the way through. Place your cheese in the middle. Add more or less cheese depending on your taste or the size of the chicken.
Once the chicken is sliced and the cheese is in, sprinkle chicken evenly on both sides with the Italian seasoning, garlic, salt and pepper.
Place the chicken on top of the potatoes. Cover the chicken with the tomatoes and then sprinkle the tomatoes with the oregano and some olive oil if you would like.

Bake at 350 for about 45 minutes until chicken is cooked.

Steak, Chicken, Onion, Pepper, and Garlic

Lunch came out very good.

1 steak (on the small size) cut into bite size pieces
1 large boneless, skinless chicken breast cut into bite size pieces
1 medium onion sliced
1 red pepper sliced
4 gloves garlic minced
2 tablespoons olive oil or garlic oil
salt and pepper

Layer half the onion, pepper, and then garlic in strips on the bottom of a baking dish.
Add 1 tablespoon of the oil and sprinkle with salt and pepper.
Alternate the chicken and steak side by side on top of the onion, pepper, and garlic. Sprinkle with some salt and pepper and the remaining oil.
Add the remaining onion, pepper, and garlic. Sprinkle with salt and pepper and bake at 350 for 40 minutes until done. If the onions and peppers begin to burn, just cover with some foil.



Gluten Free Crepes

Never in my life have I ever made a crepe, much less a gluten free one. I am so excited about this and how good it same out. I started to measure then realized I needed more starch so I just started adding more in with my hand. I will you what I think the measurements were. The batter will not be very thick.

2 large eggs
1/2 cup Coffee Mate
5-6 tablespoons arrowroot
pinch of salt

Mix everything together really well. I cooked my crepes in a medium sized cast iron pan. I did butter the pan each time I made a new crepe. I got about 8 crepes out of this. The last three I added about 2 tablespoons of vanilla sugar to the batter and it came out very good.
