Gluten Free Crepes

Never in my life have I ever made a crepe, much less a gluten free one. I am so excited about this and how good it same out. I started to measure then realized I needed more starch so I just started adding more in with my hand. I will you what I think the measurements were. The batter will not be very thick.

2 large eggs
1/2 cup Coffee Mate
5-6 tablespoons arrowroot
pinch of salt

Mix everything together really well. I cooked my crepes in a medium sized cast iron pan. I did butter the pan each time I made a new crepe. I got about 8 crepes out of this. The last three I added about 2 tablespoons of vanilla sugar to the batter and it came out very good.
