Bacon, Egg, and Cheese Pasta

This was another idea that came to me when I was bored. I wanted something with bacon and this is what I came up with. Needless to say I should have made double what I did.

1 pound gluten free pasta
1 egg
2 slices of your favorite cheese or 16 ounces. More or less if you like.
4 thick slices of bacon-cooked
1 tablespoon garlic-minced
1/2 cup Parmesan cheese
2 tablespoons Smart Balance butter
salt and pepper to taste

Preheat oven to 375 degrees
Cook pasta, but not completely and drain.
Beat the egg in a separate dish and temper with some of the hot pasta water. Add the egg to the pasta and mix.
Crumble the bacon and add it to the pasta. Then add the garlic and cheese of your choice and mix.
Once everything is mixed add it to a baking dish and dot it with the butter. Then add the Parmesan cheese and bake about 10 minutes until cheese is melted.




Baked Sausage and Rice

This was a new dish that came out wonderful. I am finding the more simple I make a dish the better it is coming out.

1 cup cooked rice
1 tablespoon olive oil
2 sweet Italian sausages. Take the casing off.
1 teaspoon dried onion
1 teaspoon dried garlic
1/4 cup Parmesan cheese
salt and pepper to taste

Preheat oven to 375 degrees
Saute the sausage, onion, garlic, salt and pepper. Do not worry about cooking the sausage completely. This is more of a step to drain some fat. The sausage will continue to cook in the oven.
In a baking dish add a little oil or butter to coat the bottom and sides.
Add the rice.
Once the sausage is cooked add that on top of the rice and then top with Parmesan cheese.
Back at 375 for about 10 to 15 minutes until cheese is melted and sausage is browned.

Beef Fried Rice

I must say this was the best fried rice I made. Everything came out perfect. I usually use chicken because for some reason red meat bothers me, but I had meat that needed to be used. I also always use Jasmine rice when I use rice.

 


2 cups rice-cooked
1 tablespoon oil of your choice
1 pound meat
1 to 2 teaspoons dried onion
1 to 2 teaspoons dried garlic
4 tablespoons teriyaki sauce
2 tablespoons soy sauce or tamari sauce
2 tablespoons Smart Balance butter

Heat your wok or your pan on med high heat and add the oil.
Once wok or pan is heated brown the meat.
Once meat is brown add the onion, garlic, and teriyaki sauce. Cook everything for about 2 minutes and then add the rice.
Saute the rice for about 5 minutes and then add the soy sauce or tamari sauce and butter. Saute for another 5 minutes or so and then you are ready to eat.

If you like your rice crispy, do not all the rice at once. Do this in batches and maybe saute a little longer than 5 minutes.

Garlic wings with steak fries

I must say this is probably my second favorite meal next to pizza. I love this. As for the recipe, I use a family pack of chicken, about 6 cloves of garlic, garlic powder. Mix with the chicken. Place the chicken skin side up and drizzle with olive oil and sprinkle salt on top. Bake at 400 until golden. Add a little parm cheese when they are done if you would like. I am sorry to say this recipe is not mine. It is George Stella's. I just made a couple adjustments.
