1 boneless skinless chicken breast
1/2 cup diced pineapple
1/2 cup diced mango
1 tablespoon diced green pepper
1 tablespoon diced red onion
Salt and pepper
Mix the pineapple, mango, green pepper, red onion, salt and pepper to taste. (Make extra if you want. This is just a guideline for ingredients I use.)
Salt and pepper the chicken and put some of the salsa on top. Bake at 350 until chicken is done. When the chicken is done I always add more salsa, so make extra it you want. This is good served with rice or spinach salad.
