This came out very good and made a wonderful leftover in a gluten free hot dog bun.
1 boneless skinless chicken breast
1 small onion, slicedhalf a red pepper, sliced
1 egg
salt and pepper
Preheat your oven to 350
Season and cook you chicken until done then cut into bite size pieces.
Saute and season the onion and pepper until tender.
Combine the chicken, onion, and pepper in dish or what you choose to bake this in and cool slightly. If you do not want to let is cool then just temper the egg so it does not scramble.
Once slightly cooled add the egg and bake about 8 minutes until done.
Serve with a salad, rice, by itself, or on gluten free bread.
