Homemade Butter

If you have never tried homemade butter, you have to make it. I never was a fan of butter until I made it myself. It could not be easier.

1 pint of heavy cream
mixer with a wire whisk
plastic wrap, you will see why
pinch of salt

All you do add the heavy cream to the mixer and mix on high until you get butter. You may want to put some plastic wrap around the mixer because when the liquid separates it goes everywhere. It takes about 15 minutes or so. I add a pinch of salt at the very end and whisk it for another minute. This usually gives me whipped butter, which I love. I tried to take some pictures as I went along. Tomato, ham, egg, and cheese

Take a tomato, cut the top off and remove all the seeds.
Beat one egg.
Add some cut up ham and your favorite cheese to the egg.
Pour the mixture into the tomato and bake until brown.

 

Not chicken fingers, ham fingers

Take the same ham only cut the patties into fingers. Dip the ham in some egg wash and bread the same way. Instead of frying them, bake them at 350 for 25 minutes or until brown.


Ham-Burger...

So, you have heard of the hamburger. I made a ham-burger that was fantastic.

-Take a ham patty, I used Hormel because it is gluten free. Bread the ham with some gluten free breadcrumbs. I seasoned the breadcrumbs with dried onion, thyme, paprika, and pepper.
-Fry the ham in a little bit of olive oil until brown.
-Top with cheese, tomato, lettuce, onion, what ever you can think of.

Bacon and Cheese Crepes

I wrote a crepe recipe a while back, but I just got this Le Creuset crepe pan so I had to try it out. Needless to say I was not disappointed. This was so much fun.

Basic ingredients:
2 while eggs
1 tablespoon water
salt and pepper
1/2 to 1 tablespoon butter before making each crepe
Hormel bacon bits
Swiss cheese


Chicken Salad on Boston Lettuce

1 whole small chicken
3 tablespoons of juice that will come out of the chicken while cooking
6 tablespoons light mayo
6 tablespoons plain Greek yogurt
1/2 to 1 teaspoon Dijon mustard, more or less on your taste
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried chives
salt and pepper
Boston Lettuce or any lettuce you can find
 
-Roast your chicken until it is done.
-Once cool enough to touch, shred the meat with your hands in a bowl.
-Add all the ingredients to the slightly warm chicken. These are the list of ingredients I added. If you like more or less then you add what you like.
-Refrigerate the chicken for a couple of hours. If it becomes a little too dry add some more of the chicken juice or yogurt or mayo. All of this is what you prefer.
-Serve the chicken salad on the lettuce. Add any topping you like. I added tomatoes this time. Bacon is good, cheese, caramelized onions, red peppers or just plain chicken salad is very good.
