Bacon, Egg, and Cheese Pasta

This was another idea that came to me when I was bored. I wanted something with bacon and this is what I came up with. Needless to say I should have made double what I did.

1 pound gluten free pasta
1 egg
2 slices of your favorite cheese or 16 ounces. More or less if you like.
4 thick slices of bacon-cooked
1 tablespoon garlic-minced
1/2 cup Parmesan cheese
2 tablespoons Smart Balance butter
salt and pepper to taste

Preheat oven to 375 degrees
Cook pasta, but not completely and drain.
Beat the egg in a separate dish and temper with some of the hot pasta water. Add the egg to the pasta and mix.
Crumble the bacon and add it to the pasta. Then add the garlic and cheese of your choice and mix.
Once everything is mixed add it to a baking dish and dot it with the butter. Then add the Parmesan cheese and bake about 10 minutes until cheese is melted.




Baked Sausage and Rice

This was a new dish that came out wonderful. I am finding the more simple I make a dish the better it is coming out.

1 cup cooked rice
1 tablespoon olive oil
2 sweet Italian sausages. Take the casing off.
1 teaspoon dried onion
1 teaspoon dried garlic
1/4 cup Parmesan cheese
salt and pepper to taste

Preheat oven to 375 degrees
Saute the sausage, onion, garlic, salt and pepper. Do not worry about cooking the sausage completely. This is more of a step to drain some fat. The sausage will continue to cook in the oven.
In a baking dish add a little oil or butter to coat the bottom and sides.
Add the rice.
Once the sausage is cooked add that on top of the rice and then top with Parmesan cheese.
Back at 375 for about 10 to 15 minutes until cheese is melted and sausage is browned.

Beef Fried Rice

I must say this was the best fried rice I made. Everything came out perfect. I usually use chicken because for some reason red meat bothers me, but I had meat that needed to be used. I also always use Jasmine rice when I use rice.

 


2 cups rice-cooked
1 tablespoon oil of your choice
1 pound meat
1 to 2 teaspoons dried onion
1 to 2 teaspoons dried garlic
4 tablespoons teriyaki sauce
2 tablespoons soy sauce or tamari sauce
2 tablespoons Smart Balance butter

Heat your wok or your pan on med high heat and add the oil.
Once wok or pan is heated brown the meat.
Once meat is brown add the onion, garlic, and teriyaki sauce. Cook everything for about 2 minutes and then add the rice.
Saute the rice for about 5 minutes and then add the soy sauce or tamari sauce and butter. Saute for another 5 minutes or so and then you are ready to eat.

If you like your rice crispy, do not all the rice at once. Do this in batches and maybe saute a little longer than 5 minutes.

Garlic wings with steak fries

I must say this is probably my second favorite meal next to pizza. I love this. As for the recipe, I use a family pack of chicken, about 6 cloves of garlic, garlic powder. Mix with the chicken. Place the chicken skin side up and drizzle with olive oil and sprinkle salt on top. Bake at 400 until golden. Add a little parm cheese when they are done if you would like. I am sorry to say this recipe is not mine. It is George Stella's. I just made a couple adjustments.

Chocolate cake whipped cream frosting roll

So I have some chocolate cake mix and was wondering what I could do. This is what I came up. I made the cake according to the directions and put some of the batter on a parchment paper lined cookie sheet. Don't use too much of the cake batter or the cake will be too thick to roll. Once the cake is cool, evenly distribute whipped cream frosting and roll. It might fall apart, mine did but it wasn't too bad.

I had left over cake batter so I made mini cupcake with strawberries inside. The strawberries make the cake a bit watery but it tasted good.

Hands down my favorite food!

How I make my pizza. This is a method I found through trial and error.

1 package of Bob Red Mill pizza mix
1 large egg
1 3/4 cup warm water
1 tablespoon olive oil

Heat water until warm. In the package of flour you are provided yeast. Add yeast to the warm water and let stand about 1 minute.
In a bowl or mixer with a paddle attachment add the flour, egg, and water with the yeast. Mix until combined well. Once mix is combined form into a ball and top with the oil. Let stand 45 to 60 minutes.

Once risen, preheat oven to 425. I say do not preheat your oven until the mix is risen. Spreading out the mix on the aluminum pizza trays is time consuming and once you are done spreading the mix your oven will be preheated.

I use four disposable aluminum pizza trays. Evenly distribute mix onto the trays. I oil a piece of plastic wrap and use that spread the mix. Place the oiled plastic wrap on top of the mix and smooth out. This is a little time consuming, but so much easier and it does not stick to your hands.

Once mix is spread out, bake 5 to 10 minutes. Take out of the oven and top with what every you like. Bake another 10 to 15 minutes until cheese is nice and melted.

Still learning how to do this

So I figured out I can set tabs for different pages. Now the problem is I want to organize my posts into categories but I am not sure how. The only thing I figured out is that I can copy and paste post by post. I know I don't have many posts yet, but this is a bit time consuming. Is there an easier way to do this? Thank you.
